Unlike last weeks Makloub from Tunisia, this one was considerably easier to make. Basically a grilled ham and cheese sandwich. But in that simplicity is also tastiness. I opted to plus up two different ways. First with a course grain Dijon mustard for sharpness, and the second with a jam Christine makes with no sugar added. The latter provided a nice fruitiness without being cloyingly sweet since the only sugar is from the fruit itself.

I mean, come on, right? How could this have been bad? Bacon, onion, green bell pepper, and egg cooked in bacon fat. So good. Made even better with The Pepper Plant California hot sauce (affiliate link, just sayin’). It has jalapeños, dehydrated onions, dehydrated garlic, and more and just goes great with all the ingredients in this sandwich. Their habanero version is also excellent.

I think the alternative name for this video could’ve easily been forcemeat given that I say it about 50 times. Yeah, this was me practicing some “ready, fire, aim” if you know what I mean. Who reads a recipe then buys ingredients only to then realize there was no bread involved? This guy, apparently. It was a lot of work for what I am sure was considered a schmancy dish in 1924 but man was it light on flavor. And adding boiling water to a hollandaise sauce? Yeah, no. Plussed it up a couple ways both of which used bread to make it a sandwich sandwich. Both version were improved but the version with fish forcemeat and the J.O Spice became something quite tasty. Zero chance I am making this ever again though.

Unlike most cookbook authors of the era, at least the Vancouver Gas Company made an attempt to tie back one of the sandwich ingredients to the place in the name. It was pretty straightforward, ham, chicken, curry powder, and chicken stock cooked down into a paste of sorts, then slathered in between buttered bread. While recipe did kinda over-index on curry powder, it was still tasty. Plussed it up with a sweet mango chutney that provided a nice contrast and a touch of heat.

We haven’t done a lot of dessert sandwiches on Sandwiches of History. That may need to change. I think had I made the cookies a little too big but the combo of chocolate with the cream cheese with salt and paprika was tasty. Made even better with a little fruit.

I must admit, this one surprised me. The combo of deviled ham, mayonnaise, dill pickles, onion, and prunes is not one I’d of ever put together. Yet, it worked. Far and away the number one comment was to toast it. I get the textural benefit but I’d also worry about the filling out. Maybe toasting the bread before hand would be the way to go. Either way, this was one of the few I didn’t feel compelled to plus up.

Pineapple Peanut Sandwich Recipe Remix (1927)

I posted the original Pineapple Peanut Sandwich a couple weeks ago. Quick refresher, it was crushed pineapple, peanut butter, and salt. Lots of salt. A lot of folks said I should do it again without the salt. But here’s the thing, I know that would not only work but be much tastier. No, it wasn’t enough of a stretch. So, I decided to dust off the ole Recipe Remix concept and re-do the sandwich keeping the core ingredients. I should note that for Recipe Remixes, I don’t stick to just those ingredients. The lime juice in the marinade brought nice little acidity and the brown sugar both added some nice caramel sweetness but also help the pineapple caramelize on the grill. Then I paired with the fruity, smokey, and in my case, spicy, gochujang and peanut butter for what I would say was a very tasty version of the Peanut Pineapple Sandwich. Yolélé Onion and Moringa Fonio Chips
Can’t say as though I’d ever heard of fonion chips let alone seen the. Apparently it is a healthy grain from Africa that these folks formed into chips. Tangy Baobab flavor which had onion and moringa (another ingredient I’d never heard of). Citrusy, grassy, and oniony, these were tasty but the texture was just ok.

Lay’s of China Japanese Skewer Potato Chips
According to Google Translate these bad boys were Japanese Skewer flavor. Hmm, ok. All I know is there was a chickeny, umami deliciousness to these. The only downside was that they were Lay’s. Which means that the thin chips were mainly debris by the time I got to ‘em.

Patatas Espinaler Potato Chips
And rounding out the week was another flavor featuring something I’d not heard of let alone tried. Salsa Espinaler from Barcelona is apparently a vinegary hot sauce (which doesn’t seem to be too hot). Heavy paprika flavor to the salsa but the chips were really well balanced. Plus, they were cooked in olive oil which made them even tastier. Despite the word “hot sauce” flavor this wasn’t too spicy at all.

Can It Sandwich?
All three chips from the week made it into Can It Sandwich? this week. I wasn’t too sure about the Yalélé Fonio chips but as it turned out they were even better when sandwiched. The other two naturally sandwiched well. And all three together? You’ll just have to watch to findout.

Barry Is Cooking Again
Barbecue Sauce Cookie
When I saw this recipe on Michele Debczak’s Recipe Card substack I knew I had to try it. As you likely know if you’ve seen any of my Barry’s Ice Cream O’Clock videos, I love the combo of sweet and savory. So cookies that feature both brown sugar and barbecue sauce? Uh, yeah, I’m in. These were tasty but the barbecue flavor was a bit light. When I make them again (yes, when, not if) I might try adding a fair amount of barbecue rub as opposed to barbecue sauce.
