Ok, with that hellacious week of 10-12 hour days behind me, time to get back to normal. This week had some interesting if not ill-advised sandwiches, some pretty good ones, and finished out the week with a layup. Not too shabs McDabs. Oh, and I was interview live on air for the WGN Chicago’s morning news. Thankfully, I am one f those annoying morning people so I was ready to go at 6:15am. I thought it went pretty well. (Even if I didn’t successfully convey 200 BC to the anchor)
Gentle reminder, Sandwiches of History: The Cookbook is available for pre-order at Amazon Why not reserve one now?
One last thing, any links that go to Amazon are affiliate links. So if you buy something, I might get .005¢ to put toward sandwich ingredients (It really doesn’t pay much tbh) Any links that don’t just go to products I think you’ll dig anyway.
Ok, on to the sandwiches!

Smörgåskaviar (Sweden)
International Sandwich Sunday
Original rating: 7.5
Plus up: Black pepper | White pepper
Plussed up rating: 8 | 8.5
This was a delightful little snack from Sweden. I’d never had creamed cod roe before and I must admit I enjoyed in this context very much. In the video I talk about how I saw some that look like they had mayonnaise as the base. Nope! Many fine Swedish folks and folks familiar with Swedish food set me straight, it was butter. That would made this even better but the combo of the rye crisp, hard boiled egg, creamed cod roe, and dill was plenty tasty all on it’s own. I thought for sure that black pepper would be my preference but the floral heat of the white pepper won me over. Fun fact, black pepper and white pepper are the same peppercorn, it just a matter of when they’re harvest and how how they’re processed the makes the difference. Check it out!

Deviled Egg Sandwich (1937)
Household Search Light Recipes
Original rating: 5
Plus up: Tabasco
Plussed up rating: 6.5
Yeah, the toast on this sandwich was, how you say…well done? Lol The recipe for the deviled egg did not resemble deviled egg recipes we know and love today. To make sure this was accurate I did a search of newspapers from 1937 via the Library of Congress. Sure enough, this was THE way deviled eggs were made. This was fine and plussing it up with Tabasco helped. But it would be much better with a modern day deviled egg recipe.

Roast Beef Sandwich Number 2 (1909)
The Up-To-Date Sandwich Book
Original rating: 7
Plus ups: Caraway seeds and butter lettuce
Plussed up rating: 8
Despite my production error in showing 1936’s 1,001 Sandwiches cover, this really was from 1909’s The Up-To-Date Sandwich Book of 1909. Not exactly the most complicated sandwich but still tasty. And I guess the Beef on Weck sandwich made a massive impact on me because when I saw beef and horseradish my mind immediately when for the caraway seed plus up. No regerts.

Pineapple Peanut Sandwich (1937)
Household Search Light Recipes
Original rating: 3
Plus up: Hoisin sauce
Plussed up rating: 4
I feel like I need to clear a few things up about this sandwich. In the video I mention that I am using an all natural peanut butter. I thought it was clear that an all natural peanut butter made it clear that it was just ground roasted peanuts. No salt, no sugar. Apparently I was off with regard to that. Also, some folks questioned the salt I used. I used iodized table salt as I believe it is most likely what would have been used. While kosher salt is lighter and something I used every day in my cooking outside of SoH, it is hard for me to think it would have been used ubiquitously in 1937. The other reason is that iodine was introduced to table salt a little over a decade earlier as a way to combat goiter which is a thyroid condition that was getting out of control in children back in the day. I do think this recipe could work but the amount of salt would have to be a sprinkle at best. The hoisin sauce was a nice distraction but ultimately couldn’t save the day. Some folks said they think hoisin sauce is salty. Me? I know there’s some salt in but the thing I get most from it is a plummy sweetness (and yes, I know there’s no plum in it lol). This one is begging for a Recipe Remix.

Something Special (1974)
Williams’ Sandwich Recipes
Original rating: 4.5
Plus up: Fried dill pickle chips
Plussed up rating: 6
This sandwich was odd. I think it would’ve scored higher had they not heated the lettuce. Don’t get me wrong, I sauté lettuce sometimes and it’s great. But in this instance it was trapped under cheese and just kinda steamed. The seasoning was interesting, at least, and the alfalfa sprouts were…there. For the record, I don’t hate alfalfa sprouts but they often inspire me to ask why they were included. Adding on the dried dill pickle chips as a plus up helped but this is another sandwich that’s ripe for a Recipe Remix.

Watercress, Lettuce, Sardines, Shrimps, & Oysters Sandwich (1914)
The Neighborhood Cook Book
Original rating: 5.5
Plus up: Toasted sesame oil
Plussed up rating: 7
Welcome to the least imaginative named sandwich ever. On the flip side, you know what you’re in for. The cookbook was published in Portland, Oregon. And while that’s not exactly on the coast, it is close enough that I wondered if they meant us to use fresh shrimp, oysters, and sardines or tinned. Given that it was 1914 and a sandwich, I chose tinned. With that “French Dressing” (aka vinaigrette) it was a nice lovely seafood sandwich. Most of the time, I know what I want to plus up a sandwich with when I first read the ingredients. In this case, I had to toss my original idea, J.O. Spice (like Old Bay but more intense) out the window as it wouldn’t really go with the vinaigrette. So I opted for toasted sesame oil and to be honest I wasn’t sure if it would work. But boy did it. It brought a nice nutty flavor that worked well with everything in there. Go figure. I guess even a stopped clock is right twice a day.

Bacon Cheese Sandwich (1926)
The Art of Sandwich Making
Original rating: 7
Plus up: Outer Limits Ghost Pepper and Roasted Garlic Hot Sauce | ← + over easy egg
Plussed up rating: 8 | 9
Sure, I’ll try your Yeast Sandwiches, your Goblin Sandwiches, but I am human. So, every once in a while I like to treat myself. To wit, the Bacon and Cheese Sandwich. I mean, grated cheese and bacon on buttered bread, toasted? Yeah, that’s a nice vacation. My initial plus up of the Outer Limits Ghost Pepper and Roasted Garlic Hot Sauce not only brought the heat to offset the richness but also some depth of flavor. Then I had to go ahead and plus it up again with the sauce AND an over easy egg. Yeah, that was good day.

I’m suspicious of cream cheese and Thousand Island dressing. I like both of those things, but I am envisioning an odd sandwich. Guess we’ll see!
I feel like the cream cheese and thousand island dressing sandwich is going to be exactly that or something completely different based on what people 1925 thought both ingredients were haha.
Also a deviled peanut butter sandwich… I’m just imagining paprika in peanut butter and … I’m not mad about it thinking of it in theory :0 then again the dates have a huge impact on what we believe to be “deviled”
