This week brought some interesting sandwiches into view. Kicking things off with a sandwich featuring “pea pulp” and ending with the surprisingly delightful combo of tuna, cottage cheese, and lemon. Not to mention a sandwich that used 🌸 petals as its filling. What a world!

Sure, Sunday’s are typically International Sandwich Sunday but it was St. Patrick’s Day so I figure why not do the St. Patrick’s Sandwich? Needless to say the only reason this was named the St. Patrick’s Sandwich was because of the green of the pea pulp and the shamrock cut out of the cheese. It was…fine, I guess. But nothing special. Popping it under the broiler or giving the grilled cheese treatment would work great. But I opted to try out some fresh herbs. And that worked. In hindsight I do think popping it under the broil, then adding the fresh herbs would’ve been even better.

Unlike when I read other recipes where amounts are given, I was happy to see the lack of any for the anchovy paste. That’s because I got use just a small amount such that it brought a wee bit of a salty note to the sandwich. Which worked pretty well with the ham butter. Adding in the parsley freshened it up nicely.

The original version of this sandwich pretty meh. I mean, raw cabbage, onions, potatoes, and mayonnaise. At least it was seasoned with salt and pepper? My first thought for the plus up was to open it up and flip it upside down in a hot pan to sear it off. But I worried that everything would go flying everywhere. So instead I melted a slice of cheese on top and perked things up with a little Dijon mustard.

Cheese and Onion Bake Sandwich (1974)

The sandwich highlights some of the challenges I face when making these recipes. The original made four sandwiches. So I scaled it down to make one but there was one problem. I had to make a mixture of milk and egg to pour over it. And dividing a raw egg into fourths ain’t exactly easy. So, I made the mixture and used 1/4 of it. The mixture just kind of ran off the top of the bread soaking into the bottom slice. So when it came out the sandwich had a much bigger bottom slice than top slices. As for the flavor? Cheese and onion is a great combo but this was just ok given that it called for American cheese. So to plus it up, I opted for the crunch of Brets aioli (garlic) flavored potato chips and spice/punch of NEWK’s Grillo’s Hot Sauce which amped up the flavor significantly.

This recipe was interesting in that it called for mayonnaise instead of butter. While mayonnaise was first sold commercially in 1907, it wasn’t mass marketed until 1912. So this almost certainly would’ve used a homemade mayo. Yeah, I did not have time for that action this week, so jarred it was. This was a lovely little tea sandwich to begin with but, inspired by Turkey and The Wolf’s The Tomato, I added some sunflower seeds and lemon juice for texture, nutiness, and acidity.

There are recipes that, as I read them, make question what the authors were thinking. Then there are ones like this. I mean, how bad could ham, olives, and egg between buttered toast be? It was tasty but I wanted a little more so plussed it up with dill pickles and gruyere cheese. And I must say that I dug it. Normally, I’m a fan of melting the cheese on sandwich. But here the egg and toast were already warm to I left the cheese unmelted. I liked the contrast that provided. That and the nutty flavor of gruyere. The dill pickles punched it up nicely as well.

I know, I know. Eight is a pret-ty high score for such a simple sandwich. But this is one of those recipes were the whole was greater than than the sum of it’s parts. The slighly salty cottage cheese worked great with tuna providing just the right amount of moisture. And the little pieces of thinly sliced lemon not only brought a brightness but an every so slight bitter flavor thanks to the pith. If you’re not averse to any of the ingredients, I highly recommend you give it a go.
