Well, well, well…we had quite the variety of sandwich ingredients this week, didn’t we? From the pork of the Bifana to the ham/chicken/sardine of the Combination Sandwich to…well, clams! Let’s take a fond look back at all of them, shall we?

Bifana (Portugal, 🇵🇹)
International Sandwich Sunday
Original rating: 9
Plus up: Yellow mustard
Plussed up rating: 9.5
This was a tangy, spicy delicious sandwich. And I love it when a dish uses the marinade, in this case, piri piri hot sauce, paprika, garlic, and wine (and a bay leaf but come on…). When cooked down it made the flavors even more pronounced and that soft Papo Seco roll just sopped it up. Delicious.

Combination Sandwich (1917)
Salads and Sandwiches
Original rating: 5
Plus up: Old Bay Hot Sauce
Plussed up rating: 6.5
Seemingly a precursor to The Dagwood, this sandwich had a lot of ingredients but not a lot of flavor. I mean, sure, ham, chicken, sardine, and hardboiled egg at least brought some protein to the party but flavor? Not so much. The good news is that Old Bay Hot Sauce (pesky affiliate link) works with every individual ingredient. And, as it turn out, all of them together as well.

Colnbook Sandwich (Switzerland) (1896)
Five O’Clock Tea
Original rating: 6
Plus up: Caraway seed and sea salt
Plussed up rating: 7
Ah yes, the beef on beef butter sandwich. That might have been a bit much were it not for the black pepper and pickled cabbage. Not mind-blowing but not bad, I essentially made it a Colnbrook on rye by adding caraway seeds and sea salt. And I do not regret it as the combo of rye, salt, and beef is tasty.

Clam and Celery Sandwich (1924)
New Presentation of Cooking with Timed Recipes
Original rating: 7
Plus up: J.O. Spice
Plussed up rating: 8
Clams on a sandwich? That is a first for Sandwiches of History. And it still blows my mind that they didn’t call for canned clams, given the era. But the combo of clams and delicate celery leaves was quite nice. Plussed up with that J.O. Spice (another affiliate link!) which is a similar but more intense seasoning blend than Old Bay and we had ourselves a tasty little number. As some pointed out, the clams to use for this were likely bigger but hey, I gotta go with what I can get.

Windsor Sandwich (1912)
Mrs. Rorer’s Sandwiches
Original rating: 6
Plus up: Chili powder and slice of tomato
Plussed up rating: 7
What was odd about this sandwich is how it flirted with club sandwich materials but structured it in a different, if not odd, way. Unusual, too, was the call for Romaine lettuce. But the combo of ham, chicken, and mayo on toasted bread was still pretty good. Plussed up with a little chili powder and a slice of tomato made it a little more ok? Yeah, won’t be making this one again.

Hot Dog Rib Liners (1968) w/Guest Host Vic LaPira
The New Hot Dog and Hamburger Cookbook
Original rating: 7.5
Plus up: Granny Smith apple | Grillo’s pickles and deli mustard
Plussed up rating: 8 | 8.5
First off, I gotta say, Vic stuck the landing on this one. From the double plus up down to wearing a floral shirt (and yes, I own the same shirt). Vic took on a sandwich from The New Hot Dog and Hamburger Cookbook that is pretty typical of that book. Chop a bunch of stuff up mix with mayonnaise, shove into a bun, wrap in foil, and bake. Not that there’s anything wrong with that. In fact, Vic seemed pretty please with the result. Smart move to plus one up with diced Grillo’s pickles and deli mustard, and the other granny smith apple.

Peanut Butter and Bacon (1936)
1,001 Sandwiches
Original rating: 7.5
Plus up: Chin Su Hot Sauce and cilantro
Plussed up rating: 9
The combination of bacon and peanut butter is tasty. Many folks wondered about why ketchup made an appearance. I think the answer is two-fold. First, it brought a little tomatoey sweetness that actually played nicely off both the bacon and peanut butter. The second being that there one thousand and one recipes in this book. The author was bound to make some interesting choices, right? I decided to lean on that sweetness with a little Chin Su Vietnamese Hot Sauce (seriously, stop it with the affiliate links, man!) and added cilantro which gave it a Thai vibe.

So, now that I know you have a chips channel, I went to look for my favorite, the ketchup flavored from Covered Bridge. (I don't know why our chip flavors in the US are so lacking.) I can't get these anymore without ordering a case, and not gonna do that. Do you have an in with Big Chip?
Barry, thank you for enriching my diet and bringing a bit of joy and amusement to every week.
