This week was a bit of a rollercoaster. One day we’re flying high with the Tunafish Sandwich that featured tuna AND bacon, the next we’re living through lows of the Apricot Horseradish Sandwich. Still, I gotta try em, right?

Pan e Panelle (Sicily, 🇮🇹)

Well, with the Super Bowl out of the way, it was time to get back to International Sandwich Sunday. Specifically, the Pan e Panelle from Sicily. These chickpea fritters puffed and were quite tasty once fried. Relatively simple to make though they did have to sit for a couple hours. I learned since posting that a squeeze of lemon is traditional which would definitely help with the slight dryness. But, that Salmoriglio sauce (recipe linked above) was lemon plus garlic, parsley, olive oil…it was just delicious. The Bomba Sauce and parm were tasty too but for me the Salmoriglio was the move.

I don’t recall seeing tuna and bacon in a sandwich before but after tasting this sandwich I demand to know why? It is a brilliant combination. Add in a little lettuce and mayonnaise between toast and you’ve got yourself a tasty little number. With the avocado and Cowboy Candy (I make a half batch of the recipe above) plus up it was fantastic. I really should’ve rated this a 10 because I keep thinking about it. Half tempted to try and sneak into the cookbook despite the having turned in the “final” manuscript.

Not gonna lie, when I saw the name of this sandwich I was expecting something with meat. Nope. This seemed more a gentlemen’s repast. After all, Brie and honey? But, that is a very tasty combination all on it’s own. But it was next level with a little slivered almonds and black pepper. Definitely hors d'oeuvres worthy.

Apricot Horseradish Sandwich (1958 edition)

Yeah, no. First, the rehydrating process took way too long. Forty five minutes? No thank you. Then it was paired up with horseradish. I love both of these flavors but the combo was just completely off-putting. If it were made with apricot jam and was much sweeter maaaaybe. Some folks suggest that adding cheese might have been the move. I’m not sure, to be honest. And I really don’t want to spend the time to find out 😂 Never making this again. That’s for sure.

As a 12 year old boy trapped inside a man’s body, my mind immediately went to Caddyshack when I saw the name of this sandwich. Even though the spelling for the character in the movie is Spaulding. At any rate, this was basically a glorified cream cheese and green olive sandwich. Nothing wrong with that. But adding a blue cheese like Stilton definitely leveled it up. And really, any blue cheese works with green olives. Roquefort, smokey blue, you name it, it works. Highly recommend*.
*must like green olives already

It is only now, as I write this, that a I realize we did a different banana sandwich on the exact same day last week. Whaaaat? Yep. But this tea/dessert sandwich had a decidedly different process. And I have to say, though I didn’t realize it when filming, chilling the mashed banana mixture, then chilling the entire sandwich kinda gave it banana creme pie vibes. It was solid. Made even better with walnuts and shaved dark chocolate. Definitely marking this one to make again.

Sandwich with Cheese, Shrimps, and Mayonnaise (1962)

Gotta give the authors credit, the name pretty much says it all. They also claim this is Danish. And it was open-faced and involved shrimp so ¯\_(ツ)_/¯. As much as I enjoy the three titular ingredients, none are strongly flavored. Which resulted in the sandwich being kinda “meh.” Plussing it up with lemon zest and some pepper got the party started. Still, not sure I’d want and entire sandwich of this. Maybe more as an appetizer…that I would proceed to eat enough of to match the amount on sandwich. Lol
