Yesterday, we wrapped up the latest leg of Sandwiches of History: LIVE! in Atlanta. Great audience and wonderful guest Amber Nash, the voice of Pam on Archer. As I write this I am winging my way home having been gone for sixteen days!
But, the live shows aren’t entirely wrapped for the year. We’ve got two more in a couple months - May 28th in New Orleans with special guest Chef Nini Nguyen and May 30 in Boston as part of WBUR’s 75th Anniversary Festival. And in July, Dublin and London (tickets go on sale this Friday)
And I am cooking up another tour for next year that focuses on you getting to taste sandwiches of history and plus ups! Lot’s to work out but more to come.

Kitchenette Barbecue Sandwich (1935)

Plus up: Rosie’s Salted Potato Chips (cooked in beef tallow) and a top piece of bread

It should be no surprise that minced ham and egg is a tasty combo. That said, this did need a little something something. I was tempted to add cheese and broil it but as the recipe said to cook the eggs “until firm” I was a little worried about them getting tough. So I opted for one of favorite plus ups, Calabrian chili paste. But, honestly, there are so many different ways to plus this up.

Pineapple Anchovy Cheese Sandwich (1935)

I find it kind of interesting that this didn’t really work. After all, I’ve had a number seafood dishes that feature fish and pineapple. My guess is that concentrated fishiness of anchovy paste was just too much. Oh well, can’t all be home runs.

Pretty straightforward sandwich. Odd that they both buttered and mayonaissed the bread though. Plussing it up with furikake, with it’s savory sesame seeds and nori helped to season it nicely. In fact, furikake goes great with tomatoes anytime. And yes, bacon was the obvious plus up.

Plus up: Dill pickles, Gruyere cheese, and the Grilled Cheese Treatment with smoked butter

The original sandwich was tasty, to be sure. But I saw an opportunity to make it a lot better. Of course, adding pickles, gruyere cheese, and giving it the grilled cheese treatment using smoked butter made it into a sandwich that was decidedly not plain. No regrets.

Tuna Fish Sandwich(1927)

It still cracks me up that the older recipes call it “tuna fish.” This was an unusual in that it called for chili sauce and pimentos which gave it a sweet kind of flavor. So I decided to plus it up by taking a cue from pasta puttanesca and added some capers and olives. It help offset the sweetness a bit and worked well with the other flavors.

This was a head scratcher. Nuts and shredded cheese mixed together with no binder and put between bread. Made for one messy sandwich. So, I plussed it up with the Grilled Cheese Treament using mayonnaise. That made the cheese gooey and tasty and brought out more of the walnut flavor.

I’m not averse to vegetarian sandwiches. After all, a grilled cheese sandwich is vegetarian. I am, however, averse to beets. They always taste like dirt to me. So imagine my surprise when I bite into this sandwich and thoroughly enjoyed it, beets and all. As with any international sandwich, lots of strong opinions from folks. Some decrying the use of mayo, some saying mayo is perfectly fine. The one thing Australians united around was my mispronunciation of the word sanga. Noted.

Maybe it’s a Midwest thing but I grew up calling it tuna fish. And occasionally I still do…I wonder how the salad sandwich would taste instead of mayo use peanut butter, humm
