Confession time. Today marks the second-to-last day of filming for a client (nothing to do with Sandwiches of History). Yep, this past week I have been out of town, on a set filming (not acting but producing, script supervising, etc). And each day has been 10-12 hours long, back-to-back since the previous Wednesday. Basically, up at 5:30 am, start at 7am, end at 5-7pm, dinner at 8pm, bed at 10pm, repeat. So, yeah, busy.
Which means in order to make sure you get your daily dose of Sandwiches of History I had to record multiple videos a day in the run up to our shoot. On top of that was all the prep work needed for the day job before this week as well. Which is why the videos from the week were rife with technical errors like an omitted ingredient, un-filmed plus up, etc. Oh, and it is highly likely that there will be typos/errors in this too. Sorry. Hopefully by mid-next week, after get a few nights of proper sleep, we’ll get back on track of having technical screwups every other week instead. Lol.

I must admit, I absolutely nailed this sandwich recipe. I also did not really stick the landing on this recipes. Yes, some folks wrote in from Brazil with praise and others not so much. As many pointed out, it would’ve been easier to eat were the recipe to call for using a smash burger. Alas, it did not. So we ended up with a hamburger with no less than 12 ingredients including corn and potato sticks. The “X” in X-Tudo does mean “everything” so full credit on the naming. It was difficult to eat due to it’s size and some ingredients just faded away but overall it was a fun, over-the-top burger. I knew with all those ingredients there was one thing that would plus it up, NEWKS Grillo’s Pickles Hot Sauce. I’d be able to sneak in some brightness from dill and a little heat without really adding to the height.

Jellied Chicken Sandwich Number 1 (1936)

I have to admit, I held off on making this for a while because of the name. The idea of jellying chicken just sounded odd to me. Yet, it turned out to be just used as a binder between minced chicken seasoned with salt and pepper with a little cream. The intent, I think, was to make it into a sliceable loaf. Mined barely made in that regard. Not a lot going on flavor-wise. A little surprising given the horseradish which disappeared entirely. That’s why I busted out the All Purpose seasoning blend. It is a solid go-to for chicken and sure enough up-leveled this sandwich as well.

This was one of those rare olden tymee sandwich recipes wherein just a few ingredients came together to make something greater than the sum of it’s parts. Minced shrimp, butter, lemon juices, salt, pepper, and Worcestershire sauce combined to make a delicious little sandwich. The only thing I wanted to add was a little lettuce. Of course, this video marked the first big error o’ the week - the missing Worcestershire sauce adding scene. So, on a small break I decided to make it up to every one (linked below).

I have to say, this sandwich was pretty tasty. Sure, it’d be better with a nice smoky ham instead of deli ham, maybe a pepper jack cheese instead of just plain Monterey jack, and cheddar instead of American cheese but still it was good. Of course, the tomato slices, garlic salt, and oregano did a fair amount of heavy lifting. Naturally with that combo of flavors, I plussed it up pizza style with some chili flakes and parmesan cheese. And while the top layer of bread didn’t add a lot of flavor, it did make it easier to eat.

Hamburg Hot Dot Sandwich (1936)

Is a hot dog a sandwich? It is when it’s the Hamburg Hot Dog Sandwich. Admittedly, this was more akin to a meatloaf given that they had us add an egg but the net effect, flavor-wise, was hamburger. I thought may the ratio of onions to meat was too high but when it cooked it was just fine. And given that it was a hamburger, I plussed it up with dill pickle relish and some yellow mustard. Some folks commented about the fact that the original recipe called for ketchup. Me, I kinda like ketchup in concert with the other condiments used here.

Egg In Bun Sandwich (1963)

This was kind of a fun one to do. Cut a hole in a hamburger bun, brush with melted butter, add an egg and sprinkle on some salt and pepper. But, it did say to cook for 25 minutes. And while the egg was perfectly cooked, I would’ve preferred a runny yolk. Interestingly enough, the bun got nicely toasted on the outside and was still soft on the inside. When I make this again, I will definitely up-level the cheese and cook it for a shorter amount of time. I plussed it up with bacon because let’s face it, this was clearly a breakfast sandwich. So I went around my own standard practice of not adding meat to a vegetarian sandwich to make it more breakfast-y. Could’ve used to some hot sauce too, to be honest.

Cauliflower Sandwich (1935)

I don’t know about you but over the last few years I have seen post after post about cauliflower “steaks.” Given how vegetables have been treated in these old cookbooks, it never dawned on me that perhaps the concept of a cauliflower steak wasn’t that new. This was pretty ok. I do think there was a missed opportunity to highly season the flour before frying. The upside of not doing that is that it left the “steak” ripe for any number of plus ups. For me, I thought lemon piccata. I didn’t add the parsley but the lemon juice brought a nice brightness and the capers a slightly salty yet pickley pop. Both worked well with the butter used to sauté the cauliflower as well as the butter in the sandwich.

Lay’s Limited Summer Flavor Salsa Fresca Potato Chips
Oh, Lay’s, why can you not deliver on the interesting flavors. I have to give it to you, you’ve got the core flavors locked down. They may not be the most interesting versions but they don’t suck entirely. But this “Salas Fresca” nonsense was just embarrassing. If you feature a big picture of a jalapeño on the bag, maybe add the flavor of it and not just the heat? Yeah, this was a sweet and generically spicy tomato potato chip. Don’t recommend ‘em.
